Any suggestions to how i can get a drier taste to my brews ,could i alter the fermenting temp? i use so4 and think it might be fermenting in the high 20 ,should i change to another yeast ?

I am hoping to create a clone of hasket markets scafell blonde and from their web site i gather they use 3 hops for bittering goldings northdown and challenger .I,ve never given much thought to bittering hops as i always thought most of the flavours got destroyed in the boil so the differences...

I thought i would give eskimobobs hefevescent a go but use wb 06 instead will it produce clear or cloudy beer ? i aim to use no finnings and keg it as soon as its fermented down to 1010-1014

:hmm: Would it be possible to reclaim a yeast from simply buying a bottle of hoegaaden tipping the entire contents into demijohn with some spraymalt and growing it on from there.I ask only because the yeast is held in suspension?

I suppose what i need is to be able to buy in bulk and save some money as i cant see there being a sell by date for sterilisers
