    Hi, I've just racked this after a 10 ferment and the wine smells and tastes of cinnamon. Is this normal? Or has anyone had the same result and do you think it may settle down with a bit of ageing? Dan

    Thanks for your input Led Zep. I was just browsing homebrew stuff on eBay and saw they were for sale. Did a bit of investigation on toasting them and thought they might be a good way to get extra Oak in future wine. Dan

    Just made this for my first attempt and am very happy with the result. Having read some of the reviews of this kit I can only agree it's sweeter than I thought it would be and light almost like a rose. Anyway I'm going to make one of the more expensive kits next so I'll keep you posted Dan
