    No, sorry, should have made it clearer. Stick vegetables in a 2% salt solution and next day it will start lacto-fermenting. Its a way of preserving, its how kimchi is made. The bubbles have pushed the okra up and dislodged the weight that should be keeping them submerged.

    I'm struggling to figure that out. I get slight overshoots rather than undershoots. Is 74.8 close enough ? Is it running a multi step profile ? You could skip to the next step if so.

    All vegetables ferment. At least all the ones I've tried so far have. The surprise winner at the moment is sliced leek, lovely. Current batch is Okra/ladies fingers. Gone off like a train, it looks like I've made it with lemonade.

    Don't give in :D I assume you've got it set so that the RAPT probe is the 'master' in settings ? Why have you got PID disabled ? Its a key part of keeping a stable mash temp. Are you re-circulating ? I have PID on, 0.3 hysteresis, heater 100%, pump 80%.

    If the prototype works then stick with it. :D I recently put a dash cam in the wife's car. I thought I'd put the cables roughly where they needed to go, assess it and then do it properly. Put the cables in, sat back to review and realised I'd done it. One of the quickest DIYs I've ever done.
