    For anyone that's interested, i put the yeast in 30c 100ml wwater as instructed and waited 15mins and it was exploding up the beaker. Never seen yeast do that when i have hydrated it before.

    Ah Coolio, around 5% won't be too spicy then! It's bubbling away nicely at the mo, so will leave until it slows down a fair bit. I din't have a secondary fermenter, but maybe time for a little investment.
