    Yes I've tried a slightly better quality honey (and I added oranges too) and the results where good but I didn't sweeten it so it was quite dry but very drinkable and it's getting even better with age. My current mead is honey only, no oranges as I think that contributed to the acidic dryness.

    The mead is doing reallywell, I've left it in the demijohn and will be bottling it shortly. It's been crystal clear for a while and I've racked it a couple of times and degassed it. I'm probably going to rack it and degas it one final time and then bottle.

    In low quantities the raisins act purely as a a yeast nutrient although I have heard anecdotal evidence that they also help with PH of the final product. I use raisins in my wines and meads if I have no powdered yeast nutrient (it always seems a more natural and traditional alternative)...

    Christmas Pudding Wine

    Yes it uses 2 1lb good quality Christmas puddings so there is indeed 2lbs of Christmas pudding in this. First time I have known a wine to be rather greasy when fermenting due to the fat content of the puddings. Not a stupid question at all, it could have just been pudding flavoured as you said. :)

    KILL IT - KILL IT WITH FIRE! Seriously though, I would leave it and let it ferment out as normal. I've never seen this before but I tend to leave my wine to it's own devices.

    On a serious note, I always take Ringtons Lemon, Ginger & Ginseng tea with a couple of paracetamol when I have a cold or flu. Much better and cheaper then Lemsip.

    I used to be a chef but these days I manage a chapel of rest for a Funeral Director and I think anyone messing about with broken glass and beverages has a good chance bypassing A&E and coming to see me. :-o

    I like digital thermometers over the old fashioned kind. Also, if any glass was ever broken on, in or near anything to be consumed I would throw it away. Regardless of the red ink etc. glass and your insides are not a good combination no matter how small the pieces. No amount of filtering...

    Thanks for that. I also avoid grape concentrate where possible because I think the price is a complete rip off. I'm sure it must take as lot of grapes to make the concentrate to it still rankles.
