    Sugar Invert No 1 Syrup

I made some Invert Syrup last night following the unholymess instruction. Found that the temperature rise really slows after about 104C up to around the target temp of 115C. Takes awhile. It has got me thinking also, what about heating Golden Syrup, adding some Lactic acid and trying to invert...

    Jester Hops

I had a bottle of the Jester IPA from M&S (Adnams brew it) at the weekend. I was not too keen on the flavour, sort of dry grassy, definitely different to my palate, like no other beer I've tasted.

    Essex Tap Water

I'm in South Essex, been testing my water supply for past 5 months with one of the aquarium test kits off ebay, I've been getting between 171 - 200 ppm of CaC03. I put these figures into the calculator from this site and adjust accordingly with CRS and also various Salts...

American style Pale Ale and bittering hops

I'm trying to concoct a recipe with my leftovers, done a Cascade Single Hop Pale Ale from the Greg Hughes book a few brews back which I'd like to do again and adapt to my leftovers. I think I have enough Cascade for the aroma hops, just need something else to go with it for the bittering hops...

    In pursuit of glory...

One thing, the glory for me, I just love the fact I can get some of the Earths own water out of my tap, add it with some Malt grown in this country of ours leave it in a bucket for a couple of weeks and get something that tastes great and makes my brain go a little funny. A gift.

    Bottle choice

Bottles all the way here at the moment. I don't soak my labels off and I've noticed that some of the bottles have larger neck labels than others which makes filling a little tricky to see where your level is as it's obscured by the label. Theakston seem to be my main culprits, they get sent to...

It's going down the sink tomorrow

Well up to my 7th brew and now made a mistake, managed to spray my wort chiller with E-cover surface cleaner instead of my bottle of Starsan spray (made up in a E-cover bottle) dumped it in the wort covered in the stuff. Thought I might get away with it but after 2 weeks the beer is soapy...

I use Evernote, slightly more advanced than a loose sheet of paper but easy for me to keep all the info in one place

Thanks, I'll give this approach a try, I have plenty of stock in the garage now.

Bottles - Carb and Condition times

In my Greg Hughes recipe book it gives an idea of "Ready to drink" in weeks and also a Conditioning time also shown in weeks. This works out to a week in the fermenting bin and then the rest of the time conditioning to reach the "Ready to drink" week. I'm a little confused as to where my process...

    The Old Forum Water Calculator

I tried the water treatment calc with the example given on the Brupaks page but the figures for CRS come out quite different. http://brupaks.com/water%20treatment.htm Example given... CaC03 is 195 p.p.m target range of 30-50 p.p.m to reduce the alkalinity by 160 p.p.m. CRS should be...

Have a go at simple AG

Just taken a hydro reading of the brew number 3, English IPA and again just like brew no 2, the Porter, i'm 0.7% over the predicted ABV. I'm guessing this is due to not topping up the wort with water to the predicted volume I had in my calculator spreadsheet? I was expecting 9.61L into the...
