    Yip. I added the sherry steeped ginger in the beginning, and the chilly infused vodka after fermentation. Add the chilly bit by bit until you have the right amount of spice. You want the ginger to give a nice kick in the back of your throat as you swallow. It should not burn your mouth.

    Mint disappeared. Go at least 2 solid hand fulls of mint per pineapple ot per 1L of pineapple juice. I went with 1 hand. When I bottled, it was there, but i might have tasted the trub. I bottled in porcelain bottles with cork. Dont want any light damage.

    I thought about using boiled dme to take up headspace. The brett will have some work along with the diacityl consumption from the sacc. Thing is, when using brett, the idea is funk. Thats why i want to add it as secondary. To maximize funk.
