    Pectolase addition for cherry stout

I'm bewing a cherry stout tomorrow. Using a kit as a base. I'm going to add pectolase as I will rack the stout onto a kilo or so of frozen cherries and put it secondary for a few weeks. I'm going to add pectolase to aid with getting the juices out the cherries. Should I add this in primary...

    Cherry stout

So the mother in laws wedding is due next April and I'm making a couple of brews for it. One is a cherry stout. I'm using a St Peters cream stout kit for it and adding cherries. I was told that sour cherries are best to use , but I can only seem to find dried ones in supermarkets or online. Any...

    Retaining fruit flavours in TC's.

I've made 3 or 4 different turbo ciders with mixed results. A common thing I've found is that if it's a flavoured cider ( I've done raspberry , mango , and peach, passion fruit and mango. ) the flavouring from the fruit juice has not really come through and the cider can often have quite a tart...

Using Munich malt as a main base malt

In my current stock of grains I seem to have about 3kg worth of Germain Munich malt and was wondering in order to try and get rid of it, isthere any recipes/beer styles that use a lot of Muninch as a base malt? My current set up allows me to do a 12L boil, resulting in about a 10L batch...

Best way to sweeten turbo cider and also how to add flavour

I've done a few Turbo ciders and 2 of them have had similar issues. They have both been very bitter after the primary fermentation , and the mango cider I made seems to lack mango flavour. With the bitterness issue , can I add a sweetener as well as adding my priming sugar to each bottle ...

I've been browsing through an old wine recipe book that my mum gave me today. I've found a barley wine recipe that I would like to do. The recipe calls for 500g of barley. Did this one yesterday as i realised that my stock is starting lower a bit, so though I would fling on a big batch. First brewing b*lls up....

Just opened a bottle of an Amarillo SMaSH I bottled a few weeks back. Straight away after popping the cap it erupts out the bottle in a white foamy fountain of beer lava.... So I'm guessing that it wasn't fully fermented when it was bottled? Or too much priming sugar? I used about a half a...

Electric brewery build...the Blue Peter version

So I finally decided to start doing my own electric brewery build. I'm basing it on the instructables version with some of my own tweaks and ideas. And the plan is to try and make as much as possible from scratch and with little cost. So I started tonight making my own thermofoil wrap for the...

    Secondary fermentation with no additions.

Just found a recipe for an Abbey Ale. The recipe states that you should primary ferment for one week then secondary ferment for 2 weeks. I take it this just means racking the beer off the sediment into a clean FV for a secondary? There are no ingredient additions for the secondary.
