    Are you giving the wort a good whirlpool after the boil with some finings (whirfloc/brewbrite/etc)? Most of the hops should drop out with a good whirlpool and leave you with clear wort.     Admiral will give minimal flavour and a clean bitterness so won't affect too much. Citra is delicious - you can never have too much citra if you ask me. Add plenty late and dry hop and it'll most probably turn out great.

    No problems not having a bittering addition, you'll get plenty of bitterness being heavy-handed at the end of the boil. Not knowing AA% of the hops, the schedule looks alright from here.

    Some kettle finings (brewbrite/whirfloc/etc) and a good whirlpool should leave most break material behind in a cone at the bottom of the kettle. Definitely best to try and leave as much break material behind as possible.

    Temp probes should really be placed after the heat source (outlet of HERMS), as it will be the highest temperature in the system. The mash will lag behind a bit but you'd rather bring the mash up to temperature that way than having the HERMS heat the wort to >80'C to try and control the mash...
