    Yes as Steve and Dennis, you can underlet by gravity or a solar pump makes it easy. Pre heat mash tun with boiled water, store grain at room temperature overnight, and add strike liquor 9-10C over mash temperature depending on time of year.

    A thermowell or thermopocket is just a tube into which you insert your temperature probe. In the case of an STC 1000 you just insert the plastic probe down to the bottom of the tube.
