As part of Manchester Beer Week we (Manchester Homebrew) are running a homebrew expo. At the event homebrewers will serve beer samples to the public as part of a competition. There will also be presentations from brewing experts about ingredients and the brewing process.

I'd suggest the last 10 minutes of the boil and don't use very much as the flavour is pretty strong. Look on US forums(eg homebrewtalk) for more ideas.

I'd replace the 2-row with any base malt, preferably not something like Maris Otter
Caragold or Carahell instead of crystal 10
Aromatic or melanoidin malt instead of the honey malt, not the same but apparently close

Glad they are still open but they do need to work on their beers a bit though. I used to drive past there quite often and tried a lot of their beers, there where a few good ones but most where majorly flawed.
