    Ive just made one of these tonight. 1.5kg light DME and it smelled sooooo good. Hope this one turns out as good or better than the other Coopers I've done.

    Overheated ferment

    I think I read on here that extra time in the FV will allow the yeast to "eat" everything in the bin! Thus clearing any unwanted, tasted, particles etc. I have had similar this week with the same brew. Im sure someone will be along to give the the full SP. Cheers

    What if....

    I syphoned into the carboy tonight, using it as a secondary fv in this instance and guess what, it's still bubbling!! Very slowly but it shows you guys know your onions....or beer as it were! I think my exuberance to get it bottled and drank would have got the better of me had I not found this...

    Right, another question. My stout is ready for bottling, however I have treated myself to a new carboy. I'm on holiday for a fortnight from Sunday, should I bottle or leave it for another two weeks in the carboy? The gravity has settled at 1008. Advice would be greatly appreciated. Cheers.

    Mines been in the FV for 6 days so took a reading tonight as things had slowed down. OG was 1040 tonight it sits at 1008. Cant see it dropping anymore so if its the same tomorrow it'll be bottled. Very happy with the small flat sample i tasted tonight too!
