It has been on the go for about a month now. I prefer to ferment to dryness, nothing worse than it starting to re-ferment in the bottle.

I have 23 litres Blackcurrant on the go, nearly finished fermenting now.
Also, 40ish litres of Apple to be made into wine rather than Cider.
