    Not as many Apples on my tree

    A lot of apple trees blossomed this year before a late frost harmed the blossom. Also some apple trees are bi-annual, good crop one year not so good the next. Biennial Bearing can be difficult to fix.

    Sounds like you've got the conveyer belt sorted. I was looking at mine this morning. I've got 2 carboys left of 2019 - well one carboy bottled, the other to be bottled. And all of the 2020 either in primary or secondary.

    I think I would agree. I am now lucky enough that I've got volumes of cider in stock that the earliest I will drink cider is ~9 months after press. The following summer (so year + 1/2) seems to be best, it doesn't improve appreciably after that...

    When to bottle?

    Joining this a bit late. I usually rack mine off once the ferment has stopped. I don't bottle mine until I need some more bottles so it can be sat in a secondary container (DJ/Carboy) for a year+ sometimes.

    Bear in mind if you do try a hydrometer test it won't ferment to 1.000 like apple juice / cider. There are some unfermentable sugars anything around 1.008-1.012 will be completely fermented. Looking at your FV you should have seen the air lock bubble, but only if the seals were all air tight...

    Yes it one of those stainless ones. A treat to me a few years back but if I was doing it again I'd probably go a bit bigger than 20L. For sure your scrat looks almost like a pulp.
