    I brewed this July last year. The only intervention it's had is a campden tablet in May of this year. I'm puzzled.

    It was a liquid fining, you put part A in and then part B an hour later. The smell is chemical and tastes in the wine.

    Heyup. Sorry couldnt get onto site for a bit, have no idea why. I just had a look to see wine jam recipes sounds interesting but it would have to be homemade wouldnt it as manufacturers dont always use sugar?

    How to sweeten

    Just leave it a little wine. I made mine from a base of crab apples and then added apple juice. It was moouth shrivellingly awful. Being so tight i just shoved it in corner for a month or so longer and had a taste yesterday. It had improved considerably.

    Bottled it, tastes like drain cleaner.... Nice fizz though. The second batch i added some ordinary apple juice and then blended both lots. Still bubbling so am waiting a little longer before I rebottle.

    It was indeed a slow starter and then shot a load of mush out the top of the demijohns. Its now settling down in that the gunk is no longer being produced but bubbling away like a good un. Im assuming i dont rack it until the bubbling has slowed considerably?
