    Beer a touch too bitter.............

I've noticed that a few of my hoppy beers are tasting a little too bitter which is strange because I never add hops at 60 minutes and generally just add a few at 5 mins then flameout, about 65c for 30 minutes then a biggish dose of pellets for a 3 day dry hop. What would be making the beer...

    1st time cider brewing.......

Thought i'd try a CiderWorks kit having never brewed cider before. Following the instructions it says after 6 days check the hydrometer reading which i've done and it's gone from 1.044 to 1.002 so i'd guess it's about done. However the cider is still fizzy so do I just leave it in the fermenter...

    Swapping yeast............

I'm making the Mangrove Jacks Juicy IPA on Wednesday but i've heard that the yeast supplied, M44, isn't everybody's favourite one so i'm contemplating swapping it for either US05, Crossmyloof 'Haze' or Lallemand New England Ale Yeast. Any thoughts which way I should go would be...

Question is, what will this actually do to the taste of the beer and how much should I actually add, I make a 12lt BiaB, do I also...

Slight metallic taste, could it be because........

A friend has recently mentioned that he loves my homebrews but that the last 2 or 3 have had a slight metallic aftertaste, something that i've never noticed. Thinking about it i'm wondering if it has anything to do with my 15lt stockpot that I use to brew 12l batches of BiaB. It's a year...

    Fluctuating fermentation temperatures.....

Does anybody have any thoughts about this ?? I use an ice bath to help keep my fermentation under some sort of control during this warmer weather. It goes something like this, my 12 lts of beer in the fermenter sits in a larger trug like bucket where it's in about 4 inches of...

    Fermentation and temperatures.

I've been lurking for a while and thought it about time I joined up with you wonderful people here. I've done a couple of kits and a few BiaB beers, all pretty good so far but I have one question. I'm finding temperature control a challenge this time of year so my question is : if using...
