    This is my first attempt at cider using apples from my own garden. Only got 4.5 gal which has finished fermenting after 11days. My hydrometer is reading 1004. Is this normal? I usually do AG beers which finish at 1010 or thereabouts. What do I do now? I also had a little taste. Quite sour but...

    Berry Identification

    Loads of laurel berries this year. Sadly they're not edible as is most of the plant. As for the gelder rose (viburnum opulus), they are edible in small quantities. Too many can cause vomiting and the s***s. Personally I wouldn't eat either. J

    Black treacle

    I once chucked a 454g tin of treacle in a coopers english bitter kit. Surprisingly the final product tasted of treacle. Maybe I used too much. I would stick to the basic kit or go easy on the treacle.

    Just downloaded the Brewmate software and have been playing around with it. In the top right hand corner of the recipe page is balance value. I'm assuming this is whether or not the beer will have a balanced flavour. Can anyone shed some light on this? Cheers J

    +1 for sugar. Make sure it's cane sugar, as its supposed to taste better.
