    Finings affecting secondary fermentation

    One week isn't going to kill you! After you have left your beer another week, leave it another two months, and it will be nicer. Add finings once initial fermentation has finished. Defo no need to add any more yeast, that won't achieve anything.

    :lol: When cooling, i thought the lid needed to be off to allow DMS, or whatever, to escape? I wonder if I could cover it with muslin, perhaps.

    I should confirm that future brews will be proper extract, with fresh Liquid ME being bought in bulk, along with hops and steeping grains.

    I think so. is this isinglass? Same dose for wine as for beer. I think it can get complicated working out the exact does to use in a commercial environment, but for our needs two teaspoons per gallon should do the trick.

    I wouldn't bother. Brewferm kits probably best made to instructions. Regarding hops, to add bitterness you need to boil them for an hour +, making hop teas or adding them direct to the brew will not add any bitterness at all.

    I don't see how you could have killed yeast, so adding more yeast to each bottle would be a royal waste of time. One of my earlier brews took ages to carb up. I don't know why, but the bottles took, if i remember correctly, about a month. Move them somewhere warm, and see if they have improved...
