    So after I visited Lidl today I find honey is now £1.35 a jar! The title of this thread is therefore somewhat misleading! Apologies if I mislead anyone by advising boiling honey to remove any preservatives. I must have had a senior moment and got my recipes confused! Still it remains far cheaper...

    Yes, just use your everyday yeast as this is a pretty basic honey. More expensive honey would benefit from say a champagne yeast. Stand jars in hot water before opening.     I always add a couple of bottles of Asda red grape juice to my red wine fruit. Not only is it cheap - but enhances the colour and depth of flavour. If you picked wild berries it's quite possible your wine will be fairly pale as they don't get sufficient nutrients from the soil.

    I think the Asda grape juice helps, although before that became available the colour was still a ruby red.

    Of course - happy to oblige. Raspberries 4 lb Sugar 3 lb Water 1 gallon. Yeast 1 tsp Nutrient 1 tsp Pectic enzyme 1 tsp. Citric acid 1tsp.     Why we do this.

    Just done first racking of 2020 Raspberry. Already it's fallen clear and bright without fining, with a glorious colour and full bodied taste redolent of the fruit. And some people wonder why we go to all the trouble! Cheers!
