    Top up with water during fermentation?

    Some advice please. As you can tell from the image my IPA brewed yesterday is fermenting like crazy, but I'm about 2 litres short. Could I top up with water now, or should I wait until the fermentation has calmed down a bit? Thanks.

    How much wheat extract?

    Hi, my next brew will still be extract (DME) English IPA and I want to improve head retention. I've read that substituting some wheat extract for the malt will help. What ratio would you suggest, for example if the recipe calls for 3kg of DME in a 23 litre batch? Thanks in advance.

    Hi, I took SG reading tonight. Still 1030, it's not moved a single point. :headbang:.... I'm fermenting in a glass carboy with a tight bung so shouldnt be leaking co2. Anyways, I've just stirred the trub up to see if that wakes it up.

    Well, I rehydrated a pack of us-05 and pitched it in six days ago to try and restart my stuck fermentation. I've not had any airlock action at all and no obvious signs of anything happening so I'm not sure if its worked. Should I have seen anything going on? Was thinking of just leaving it alone...

    INK Bird Temp Controll - PROBE

    I've got my probe dangling in an insulated brew cupboard, just measuring and controlling the air temp in the cupboard. I also have a stick on thermometer on the carboy which normally reads 2 degrees below the inkbird reading.

    Thanks. So to do this I boil up some sugar I guess, transfer to a sanitised jug, let it cool to 68F and pitch the yeast into it? How long should I leave the solution before adding it to the FV?

    It's and English pale ale. DME and single hopped with east kent goldings. Yeah, temp was a problem with the very cold snap we had, I struggled to keep the temp in my brew cupboard much above 62F. Thats still within range for the yeast though so was hoping that would be OK.
