I would have thought no more than 20% unless you want to call it a Weizen.

Do you cool the yeast to the same temp as your wort or just pitch at room temp?

Today I have mostly been brewing a Coopers Hefe Weizen. It was a couple of weeks out of date so I got it for £8. I also managed to get 1.5kg wheat malt for £4.50. It's gone in the fermenter today, so we'll see how it goes. Got some Wilko yeast on hand just in case.

I like the dark, sweet and nutty brews too. Unfortunately I just can't seem to keep em long enough to mature. I am on a poor Scottish Heavy right now that has been mellowing out in the bottle over the last 2 and a half weeks. I don't know if it's getting better or if my tolerance is just...

OK. So I've got my third brew (treacle stout) in the FV and will be bottling it this weekend. I have seen a few different suggestions on what to do at this point. I bottle straight from the FV, so no secondary. Some people suggest 2 weeks at room temp then a minimum 2 weeks cold conditioning...

My treacle stout is due for bottling next weekend. It's pretty much bottomed out at 1.010 (5.7%) and tastes lurvely straight from the FV.

Since starting the HB I vowed that I would never throw a batch away :D I'm on bottle number 4 now... I think.

A rather disappointing Young's Scottish Heavy, I named Dave's Delite. It turned out to be more lightweight than heavy at 5% and despite looking perfectly clear in the bottle, comes out looking like gravy. Slight artificial taste to it, but certainly gets the head buzzing. Oh well, only 36 more...

This goes back to my earlier statement about being protected by the society you live in. Law is not a buffet, where you get to pick and choose which you agree with. Can you break into someone's house but then cry "foul" if you get badly hurt by the homeowner?

I have thought that if I caught a burglar I'd knock him out. When he came round I'd have him tied to a chair on a big tarp and act like I was a sadistic serial killer who had done away with burglars before :D

I guess you just have to hide in your bedroom and hope that they're not those that like to beat the **** out of the homeowner just because, or set fire to your house because stealing your **** is not quite enough.
