    BrewFerm Triple

Thanks - I think I'll try without the extra sugar then and carb it up in the cornie. Messed up a pale ale that way before, would rather too dry than too sweet. And yes, I know re the cornie but I'm not into bottling (yet); I am used to waiting 8+ weeks but TBH not 6 months; and I bought the kit...

    BrewFerm Triple

Have also just put this one on using brown sugar. Lived in Belgium for 10 years, quite a fan of "trippel" so intrigued to know how this one goes. So far I have not been a big fan of single-tin kits, though, I have to say. But if it is any good then I will also wish I had doubled up - 9 litres...

    Woodfordes Nelsons Revenge Review

My favourite Woodfordes - slightly stronger (only 36L instead of 40) and definitely has that cake/toffee thing going on. Never had any problem getting it going. First one I only left for 2 weeks in secondary and it was lovely, since then 4+ weeks and even better.

    Woodfordes Admiral Reserve Review

It is on the heavy side, but very tasty. I find it's better without a second batch of sugar if you can carbonate in a cornie, and like all these kits it's best left for 6 weeks or so. I used to get this one confused with Nelson's revenge, for obvious reasons, but that one's stronger (though not...

    Woodfordes Wherry Review

I have done 3 Wherries now and while it's not my favourite Woodfordes kit, it is back on my list of dependables. I left the last one untouched in a cornie for 8 weeks and it came out much darker and stronger than previous attempts, very tasty. I was in the UK in December and found this on...

    2nd ever brew. Best ipa?

Did the Coopers IPA a few months back, but used a recipe from the Coopers website and it came out far too sweet and dark for my taste. Ok in small glasses at Christmas but couldn't wait to free up the cornie to be honest. To be fair, this wasn't the recommended recipe so I'll give it another go...

    Coopers IPA final gravity?

Spot on Abeyptfc! Thanks for your help. I seem to have stability at around 1.010. The hydrometer sample tasted a bit sweet at first, but there was a good aftertaste. Does it dry up further? Anyway, it stays in the FV for now until I have a free cornie, but it should be very drinkable.

    Newbie Beer Brewer...advice on kit

I can really recommend Woodforde's Nelson's Revenge and Admiral's Reserve, the former is the stronger I think, very tasty. Not an expert but not sure if, in home beer brewing, alcoholic strength trumps taste...

    Coopers IPA final gravity?

Thanks. I made just over 20 litres using a recipe on the Coopers site: 1.7 kg kit extract + 1.5 kg LME + 500 g sugar. Here is the recipe. http://www.coopers.com.au/the-brewers-guild/how-to-brew/strong/authentic-ipa

    Coopers IPA final gravity?

I have been rather cavalier with my kits recently, and as long as the old airlock bubbles away for a bit, I stir a couple of times, leave at least 2 weeks in the FV and everything works out well. Now I have a Coopers IPA on the go and I don't recall having seen any bubbling airlock. The lid of...

beer kit enhancers / malt extract - what/why?

So here's the situation: one 1.7 kg tin of Coopers IPA concentrate one 1.5 kg tin of Brewferm light malt extract (liquid) The IPA instructions call for 500 g of dry malt extract and 300 g sugar. -Can I just use 800g of the Brewferm? -Do I just mix them both together in the FV? -Do I need to...

beer kit enhancers / malt extract - what/why?

Thanks for the good responses, guys, that's much clearer. My German supplier was suggesting adding light malt extract to a Coopers IPA but I prefer to put my trust in you lot :-)

beer kit enhancers / malt extract - what/why?

Hi again, I have heard some people add malt extract instead of sugar to get a "fuller flavour" out of their kits, and there are also these things called beer kit enhancers. - I thought the sugar was for carbonation in secondary fermentation, so does the malt extract play a carbonating role or...

    Which first lager kit?

Hi everyone, Well I have been through the entire Woodfordes range now and had some nice ales out of it - Admiral's Reserve and Great Eastern probably my favourites - and have a breeding pair of Cornies on the go. Hardly an expert, but getting to know what I am doing :-) Am now interested in...

    Left-over beer

The standard primary fermenting bin happily accepts the standard volume of beer from the standard beer kit. But the standard cornie keg is smaller. What do people do with their leftover primary ferment? I can think of priming it in an ordinary keg (but then surely there would be too much air to...

    Christmas beer???

Haven't done it myself, but I tasted some Woodforde's Norfolk Nog last winter and it was just the ticket.

    Racking tips

Thanks everyone! Think I will try to fit a bottom tap to one of my FVs, sounds the easiest way... if it works.

    secondary fermentation necessary?

Ok, thanks - as it's the second thing I do I naively thought priming was the "secondary" fermentation  So I guess the kit instructions are just for someone bottling or racking to a non-Corny keg. To quote Manuel from Fawlty Towers: "I learn, I learn" :)
