    So your cold stepped Carafa.......... have you just chucked the malt in a jar with cold (previously boiled?) water for a day or so to get the colour without so much of the flavour? Do you then chuck this in the mash or straight in to the boil?

Malt miller website suggest 1.8ml for a 23l batch but then your recipe (also from them!) says 15ml. probably err on side...

    I'd be interested in trying the Pecan Stout. I have a Chiron (Thornbrige clone pale at 4.2%) or in a couple of weeks a vanilla mild based around Twisted Barrels Beast of a Midlands mild around 4.2%, both from the recent CAMRA homebrewing book.

    Batch priming with honey

    Hummmm, ok, I think there is enough here to put me off giving this a go for now, will stick with priming with sugar and just up the honey in the boil next time I brew it. Thinking about it, I never did hear again off the guy who said he had primed his stout with honey.......I hope he is ok!
