    Sugar Question

    I have just done the Alcotec 23% kit and my instructions said; "Add 10.5kg of brewing sugar (Dextrose Mononydrate) and mix well until liquid is completely clear. Do not use any other sugars." This is also what it says on Alcotecs website.

    Well my stuff hasn’t completely cleared and looks a bit hazy. Last night I racked it off into 5 demi johns and made a bottle flavoured with Monin Hazelnut syrup.     I put the finings in 3 days ago and it still isn't clear but it is clearer than it was, looks like a light grey water now. Imight put some bentonite in it to seeif that helps. Bit disappointed with the Turbo Klar as it certainly hasn't cleared in 24 hours.

    Trying to use chilli with Mexican lager

    I think you loose more through fermention than through boiling. I tasted the wort and it was pretty hot but has now mellowed quite nicely to produce a well rounded balanced beer that will be a great winter warmer. I would definitely make it the same way again.

    I think the inconsistent mash has meant that my ABV will be slightly lower than hoped at around 4%. Never mind, lesson learned. I will try again in a few weeks time.

    Well it is going OK so far. Hardest part was keeping the temp stable during the mash, hopefully it has worked well enough. Just doing the boil now and got my frist hops in. Probably post some pictures tomorrow.
