    S-04 vs US-05

    US-05 finishes cleaner than S-04 from my experience, 05 attenuation is usally slightly higher also, so assuming both were fermentated at the same temperature & equal volumes, I'd hazard a guess the 1.013 FG is the US05.

    20% is a decent amount of Rye, I do mine at this percentage. Don't steep the oatmeal or carapils for the same reason you don't steep rye. My advice & as others have stated is to do a mini-mash, you can then throw the oatmeal, vienna & carapils in.

    Just a thought? If kit brewers go to the time & trouble of mini mashing to pimp kits, why not just go AG? aunsure....

    Hop pellets

    Don't pour it back, do as @terrym suggested, siphon it with a nylon sock, if thats's what you're gonna do, you want minimal splashing, avoid introducing too much O2, this will affect the flavour.

    Klarstein Maischfest Mash Kettle?

    I have the Klarstein Beerfest which is the earlier basic model, cannot fault it, done 8 full BIAB AG brews, great piece of entry level kit. I bought direct from manufacturer as its free postage & same price as Amazon & Ebay. Think I paid £150.

    Brewersfriend provides an estimate based on the the grain bill. A base malt in distilled water will have a PH around 5.7 which is too high, the linked recipe has no roasted malt or acidulated malt, no mention of lactic acid, which would aid in lowering the PH to the correct range.

    Is your beer 23°C or the room? Water becomes a major factor when you go AG, with kits not so much as the producers have already treated the water for the extract. If you're new to brewing just go with the instructions, you'll adjust your working practice as you read up & gain more experience...

    starting with grain - need tips!

    Get the biggest kettle you can afford & space will allow, electric is simpler, it doesn't run out, plus less boil loss, I use a 30L kettle, I'm hardcore BIAB & will not be moved on this, I bag around 17L of 5% beer, the stronger the beer, the less volume.

    I don't know your water table, or if you treat your water, but the Mash PH is way too high with the provided recipe link. Based on this, your efficiency will suffer and the beer may have an astrigent off flavour.

    Bottles

    Get into the habit of rinsing your bottles & spraying with Starsan after every beer you pour yourself, pop the cap back on, no cleaning whatsoever required on bottling day, I've done this for years. athumb..
