Probably a donkey but I'm going for Rock On Ruby. And that is based on the well known scientific method of choosing a horse named after our dog.:D

I don't use connectors with PRV and never had a problem degassing. I have a spare connector with the one way valve removed and the beer out plugged with a 3/8 blanking plug in the jg fitting.
Without going into detail, ageing softens the tannins in the wine. As a result they become less astringent and have a softer mouthfeel. Reds need more aging than whites due to the higher content of tannin.
