So as I understand leave fermenting 2 weeks room temperature. Bottle and leave room temperature 2 weeks. Then cool 2 weeks. My question on cooling, how cool/cold. My fridge is about 2 degrees would this be too cold? From the moment you bottle should you leave bottles alone? I can't help myself...

Will see how I get on with latest barrel but I maybe interested, won't be until I get the next lot in and tested. May give you a shout nearer the time, if you still have them that is.

So far, plastic bottles feel fine, feel soft enough for me to squeeze, but I realise the carbonation hasn't really got going yet. I'm going to monitor each day, and may just follow your suggestion depending on outcome. Thanks.
