    Port anyone?

Did a bit of reading and using brandy is a quick fix as you get the oak flavour without using chips. Also can be bottled sooner. Tasted good but leaving it to clear for a few weeks

    Port anyone?

I will have to go easy. I have 20 litres of Beetroot wine on the go so might take 5 litres of that to give it a try 😀

    Port anyone?

Thinking of trying to make port using a 5l red wine kit but what is the ratio of spirit (brandy) to wine? Guessing not 50/50. Also will it need clearing?

    Dry Wine to Sweet

I find Wilko kits take a good 3 weeks and ignore your readings and let it ferment out

    Prosecco Type sparkling Wine

Any medium white kit. I use Wilko medium. I use a 30 bottle kit and when it is nearly ready, take 5 litres off into a Demi John. Do not use stopper although you can clear it. When almost finished, transfer into swing top bottles and add a level spoon of sugar to each bottle and seal. Wait for it...

    Sparkling

Successfully made sparkling wine from Cellar 7 peach and mango. Was cloudy but cleared well. Problem was when opened the fizz pulled all the sediment up and it goes very cloudy again. Still tastes good though. Next time going to leave in demijohn to clear naturally then bottle and add sugar...

    Sparkling

Made a few WOW’s that ended a bit fizzy cus I didn’t degass enough so decided to try making a sparkling Rose. Easiest recipe I found was to make as normal but don’t stabilise and then add teaspoon of sugar to the bottle once bottled. Made 6 bottles. Tried one yesterday and it didn’t work. No...

    Cellar 7 Pinot Grecio

After a few initial cheap kits I have always stuck with Beaverdale. However local wine shop closed and Beaverdale seems hard to come by on the Internet so now I am trying the Cellar 7. Not cheap so I assume it is good? Interested in their peach and mango if this turns out well

    Carrot Wine

Do you still need to use stopper if you are storing your wine longer term in demijohns? I usually stop, clear and bottle as soon as it’s finished but This one is being kept at least a year
