    Dark IPA with Simcoe hops. Bottled 23 / 1.....great taste bit minimal carbonation so far. Been a bit chilly in back bedroom, so may need a bit longer. It's going to be good I recon....

    Cider production

    It's that time of year again. Total of 50 L of cider fermenting away. As an experiment I boiled a load of juice to raise its SG to 1.14.....fermenting with wine yeast and plan to produce sparkling apple wine! See how it turns out.....

    DIY Hop spidee

    I usually add hops in Muslin bags ... one bag per batch. Tried something a bit different today. Using one of the reusable fruit bags you can get in Tesco. Hung it into boiling worr so I can add back batch of hops to it. Seems to work so far......

    Chinook IPA....first taste

    Pretty pleased.....nice colour. Made with golden promise / bohemian pilsner / pale crystal malt. Hopped with chinook and then another 100g chinook pellets added about a week before bottling. Nice carbonation / head. Made another batch that is identical except using Citra hops.

    Brewdog punk IPA clone

    A clone of Brewdog punk IPA made according to the recipe from their web site being compared with the real thing. The clone is quite a bit darker, stronger and has a much stronger hoppy flavour. Slightly harsher, with a bit more bite, but definitely the same sort of thing. Both taste pretty good!!

    Taking advantage of cold weather

    Two batches of lager....czech pilsner and vienna lager. Using mangrove Jack's bohemian lager yeast (M84). Temp in back kitchen seems perfect.....both fermenting like fury for first 3 - 4 days but calming g down now. Plan to shift to garage (totally unheated) after 10 days and just leave there...

    Not beer but....

    First batch of cider bottled. OG of juice was 1.05 ... fermented right down to 1.00. Cider always does this....only fermentable sugars in apples. Got a second smaller batch which was souped up with 3lb of honey. OG 1.072!

    Another first...dry hopping

    DPale ale with citra hops.....done a similar brew before, but this time I tried dry hoping with more citra hops just as fermentation was slowing down. Great success....pleased!

    First attempt at a slightly unusual style. 3kg bohemian pilsner malt, 2.5 kg marriss otter pale malt and 0.5 kg roasted malt. Helenbrau (?) Hops and lager yeast. OG 1.068, about 6.7% ABV. First taste tonight.....needs a bit longer to fully carbonate (only a week post bottling) but very pleased...
