    Use a sweetener such as Splenda or any of the supermarket own brands. I just add it a tablespoon at a time mix and taste until you reach your desired level of sweetness.

    Made this morning: 20L of Aldi Cloudy Apple juice (not from Concentrate) 10 Bramley Apples juiced then pulp and juice added 500ml of strong Earl Grey tea (brewed with 8 bags) 3* 1lb jars of Aldi honey 5 tsp Malic Acid 5 tsp Pectolase Youngs Cider Yeast. Bottled my last one after 2 months...

    I've just bottled 2 gallons of White Grape juice and cranberry (Lidl) and it is a light rose colour.

    I'm defrosting 6kg of rhubarb in the morning to get mine going. Now I've got loads of granulated sugar knocking around at the moment. Is that going to break down OK with the rhubarb?

    Personally I'd give it another go with the finings and use the medium/heavy dose. You've nothing to lose and if it doesn't work you know they are past their best. Let us know how it goes though as I use Youngs finings kits and hadn't noticed the use within 6 month thing.

    Like the photos. I'm going to use great big bits of green oak so the frame shouldn't be a problem. If I go the jack route then just need to find a fairly substantial piece of metal to attach to the frame to act as a pressure plate. I wonder if you can get a screw thread more robust than the...

    Going to make my own cider press ready for this years crop. I was originally going to make one that would utilise a bottle jack but thought it would be better to use a proper screw. Does anyone know where I can buy just the screw mechanism?

    When to fine and keg?????

    I leave all of my kits a minimum of 2 weeks regardless of what the instructions say. I'd leave it at least another week and let it finish fermenting.
