    Tinned Peach wine

The first thing I would do would be to look at the acid, tannin and sweetness if the wine. Some times a slight change in the balance can really alter your prescription of a wine.

Pretty interesting article on the 'freshness' of beer

I see the article a pretty in line with what most homebrewers think. He pretty much just refers to IPAs through the whole article and for them they start to loss hop aroma very quick so best drunk young. The biggest difference between HB and commercial is the quality of the fermentation and by...

    Trying a new brewing method!

That sounds like a nice brew :thumb: Why did you empty the contents of the pot into the FV then strain? Would it not have been easier to just pull the grains out then 'sparge'?

Final Decision Still to be Made

So I got the brew started at about 1030 with 36L of water in my pot and just went for it. THe post mash reading was 1.042 so I was ahead of the game but then released from a slight change in my setup I was no longer able to measure my volume. Ended up with 20.5L of wort at 1.052 and pithched...

Using Campden tablets to stop fermentation

Campden tablets stun the yeast so if there is sugar tree and I they are still properly active this will not work. Plus when you bottle with fresh they will ferment the residual sugar. You could try campden tablets and sorbate but then you can't bottle condition and will have to keg. I think...

    Brewing Bin

Not strictly true. You need to oxygenate the must for the yeast to reproduce etc. Once fermentation kicks in you don't want oxygen into the brew and the CO2 will protect the must from oxidising. For your one gallon brew just start in a DJ and fill to the shoulder so there is room for the...

Removing sediment - the champagne way

I plan to do it with a sparkiling wine I am making but I do not think it would work as well for beers due to the oxidation and lower carbonation level. With sparkiling wine you replace the lost liquid with some spirit to forify the wine and also a sugar solution to sweeten.

Final Decision Still to be Made

Unfortuently I have had to postpone it as I had a vomiting dog the night of the mash  So I have resheduled it for Sunday/Monday brewday. As for the hopping I am thinking of moving all the C hops to 0mins with some added Amarillo and using just the Amarillo at 5mins. Need to run it...

Is there such a thing as a tasty low alcohol beer?

Agreed :drunk: Like Jonnymorris says killing the yeast is a bad idea. What kind of brewing are you doing, kit, extract, AG? It would eb easier to work out if you were AG but I am sure we could find a solution with extract or kit. The issues with low alcohol beers is that they lack body. with...
