    It's a bit if trial and error, even software can't account for the idiosyncrasies if one's kit. Mine always ends up boiling off a lot of volume, so I have a big pan of boiled/ cooled water I add to the FV to get the gravity right before pitching the yeast.     Porter with high FG, mash in hot so the yeast doesn't attenuate too much. The oak is quite "drying", can leave the beer tasting thin. T

    Both are good hops for a Saison, it's quite a flexible style even America "C" hops work well in a Saison.

    60 mins is usually fine, if using pilsner as a base malt it is recommended to boil for 90 mins to help drive off the higher levels of DMS. If you just use pale malt 60 is fine. T

    NB is a really good bittering hop for malty styles. Use it. T

    Try the Lallemand dry Saison yeast with the kit, would be an easy way of getting a Saison effect. Dupont is the style bench mark, their "Avec les Bon Voux" is one of my all time favorites. Can't reccomend the Dupont yeast though, a tricky beast. T

    Seems like a lot of carapils, usually use less than 10%. I would up the pale malt, pilsner is the classic base malt. T

    Hi, did you mean decrease the chocolate to 0.05kg ? I would leave as is 100g is a pretty modest amount, depends what your after if you just want a black coloured APA then leave the chocolate out but I find it tasty to have some subtle roast. Yes I would mash about 66 degrees C. T

    Sounds good, no need to cold steep the Carafa, it's de husked. You'll get some roastyness from the chocolate anyway. Mash on the lower side to get a dry beer. Which yeast ? US 05 always a good option. T
