    Philly Sour re-krausening

Hi All, just wondering if anyone else had this experience using the Philly Sour yeast. It was very slow to start, however over the first weekend it was fermenting there developed a krausen ring mark ( I was away so missed the foam), now two weeks into fermentation it has picked up activity and...

Out of date Brett C vial

Hi All, I've got an old vial of Brett.C (9 months out of date) and was planning to make a starter over the next week or so and pitch it into a bitter towards the end of primary. Does anyone have experience with this/think it won't work?

    Gone Boom

Well i attached a blow off tube to my barleywine thinking that could handle the inevitable but I was wrong haha I've emptied the demijohn into a sanitised kettle and will let sit in there for a few days to see if there is anything salvageable that can be racked back into the jar when the...

    Bottle conditioning high Fg beers

Hi all, I'm planning to brew and bottle a few barleywines over the next month that are likely to end up with higher then usual fgs (1.02-1.028 & ~9-11%). I was wondering if priming sugar/yeast is needed in beers with a Fg this high. I'm planning on letting the sit for a while so aren't worried...

    Diastatic Amber malt

I picked up some diastatic amber malt today and am just wondering if anyone has an idea how this compares to regular amber. I'm looking to brew one of the durden park recipes that uses 30% amber and was wondering if it would be worth doing two batches with each kind and comparing

    Chevallier Malt mash length

I have some Chevallier Malt I'm planning to make a pale ale with and was wondering if I need a 90-120 minute mash? I've read that this malt in particular may need longer than 60 min but has anyone got experience with this?

    Spent cold steep grain

I was wondering if anyone had used cold steeped grains in a later conventional mash and what was left in the grains in terms of colour, flavour etc

    Gas disconnect issue

Hi all, today I received my first keg of any kind, a mini keg with ball lock spear lid and steel disconnects. I've attached the liquid one no problem but the gas doesn't want to go further than it has in the image. I didn't want to damage it before I'm sure if I'm doing something wrong, or is...

    Alefrics brewday

First brew posted in entirety, Voss old ale. The actual og ended up at 1.055 due to equipment issues/spillage. Krausen formed after one hour and it has been vigorously bubbling ever since, escaping into the blowoff tube.

    Co-pitching lactobacillus and brewing yeast

I'm looking to attempt to brew a lichtenhainer in the coming months and was considering co-pitching lactobacillus(helveticus pitch) with a German ale yeast (k-97), then adding a hop tea after 1.5/2 weeks. Does anyone know if this would work?

    T-58 yeast

Hi, I put a single gallon batch of saison using t-58 yeast into the fv yesterday and the blow off bottle was bubbling from about 5 hours after pitch whilst the krausen seems to have already peaked within about 24 hours. Is this normal for this yeast?

    Brausol special carbonation impact

Hi all, I have some Brausol Special fining agent and was considering using it in my next brew but I've read it takes yeast out of suspension and was concerned this could prevent carbonation in the bottled beer. Does anyone have experience using this?

    Floaters

Hi all, I pitched some S-04 yeast into the Saturday before last and whilst most of the krausen has dropped there are still some large lumps at the surface? I was waiting for it to drop before I took a gravity reading but provided it's finished, will this be ok to bottle if there are still some...
