    Victoria Plum Wine

Hello it was my query last year....alas we tried it at Christmas and once since but it has a very odd taste. We had never made any wine before and have since done a couple of kits so we may use some of what we have learned to do some more - but a little bit different with some more controls and...

    Victoria Plum Wine

@Mr_S_Jerusalem Fab idea - am I getting used to the point of this forum then.... it is to help the choosy alcoholics amongst us to help us to drink something akin paint stripper?? 🤣😆 It's a shame we won't be having a Christmas party this year - we could have fashioned a "Plum Rum Punch" and...

    Victoria Plum Wine

You know we have tried it this evening with some ice and soda water but it still had that taste. Going to get some tonic water tomorrow and try that :-)

    Victoria Plum Wine

Hi all @DocAnna @Pablosaurus Fast forward a little time and now we have some bottled wine. We used finings from Wilkinsons and it has mostly cleared. Taste...umm unsure. Having said that it is certainly alcoholic but I have never had non-grape wine so I suppose I was a bit naive in thinking it...

    Victoria Plum Wine

Hi we added stabiliser though the recipe didn't mention it; then racked it once sediment had settled. Hydrometer reading is still indicating 13% and the acidity is a bit less. In a glass it looks really clear and orange in colour. I think we're going to leave it another month then see what the...

    Stabiliser (Sodium Metabisulphate) Oops!

Hiiiiiii!!! Great news all!!!!!! acheers.thumb.athumb.. Just racked the plum wine again and had a taste and it wasn't too shabby! I think the acidity may still need some attention but it has lessened and luckily the stabilisation that we did last weekend hasn't turned it to vinegar. Hopefully...

    Stabiliser (Sodium Metabisulphate) Oops!

Hi thanks for the input @Graz I have just looked at the drum and it is actually 50% potassium sorbate and 50% the above. We used it as directed on the drum, 1 teaspoon per gallon. I have got everything crossed that we haven't spoilt it. We'll be racking it on Friday and then will leave it...

    Stabiliser (Sodium Metabisulphate) Oops!

Thanks @An Ankoù We mixed 2 teaspoons in a jug with some syphoned off wine, added it to the 2 demijohns and put the airlocks back on. It took about 2-3 minutes so don't think we have breathed in too many fumes. However I was the one who firstly opened the drum and then mixed it into the wine...

    Stabiliser (Sodium Metabisulphate) Oops!

Hi Oops. Stabiliser powder is very fine isnt it? This newbie had never opened it before and was met with a small cloud of dust (Friday) Saturday I had a tickle in my throat, came from nowhere, had to cough, get a drink then nothing rest of day. Sunday I had another 3-4 episodes, starting as a...

    Victoria Plum Wine

Haha well we only tried the plum wine as my OH's mum asked him to take the Victoria Plums off the tree as she can't manage this year. I have a (funny?) story in that in picking them, my OH also ate 3 whole ones, straight in his mouth! The first ten plums he cut open to stone them had maggots in...

    Victoria Plum Wine

I haven't @jof but then I prefer my wines on the drier side. I dont like the sweet pudding wine style at all!

    Victoria Plum Wine

Haha @DocAnna As a newbie I cannot really offer advice but go for it. We left 10 days between adding yeast and straining but only because we were away. We had plums in a straining bag which we stirred for 7 days and my OH squeezed it quite thoroughly after straining. There was a lot of fruit...

    Victoria Plum Wine

Thanks all. Watch this space! Incidentally is there anything I can do to reduce the 4-5 months the recipe is telling me to wait? Or should I just be patient!??:cool:

    Victoria Plum Wine

Thanks @LED_ZEP Yes we're intending to leave until the end of this month to clear then rack it again so we'll have a taste then but have something to hand to reduce the acidity (further reading is called for I'm sure!) What would be the purpose of adding the sugar? Does this reduce the acidity...

    Victoria Plum Wine

Thanks @jof If anyone can advise me about the acidity that would be great

    Victoria Plum Wine

Thanks I think we'll definitely add something! It does mention racking them off again (we did the first stage in a fermentation bucket) so we'll have to get more demijohns - well at least another one! Incidentally we tasted what we racked (well a sip) and if you ignore the yeast flavour, it did...

    Victoria Plum Wine

Yeah we've actually put airlocks onto them hence can notice the odd bubble or so. I just wondered if I was missing anything and if stabiliser would harm, even though it doesnt mention it?

    Victoria Plum Wine

Hi me again. Well we have something, currently 13% after the last hydrometer reading. We have racked to 2 demijohns and the recipe says to leave (for quite a long time) (For those who havent read it, the instructions are here Simple & Easy Plum Wine Recipe My question is, although it doesn't...
