    Think you're doing all the right things. Besides the obvious stuff like cleaning everything, the two things that are going to have the biggest impact on the final product are the yeast used and the temperature it was fermented at. Let us know how it goes.

    Go to Natures Way on the Newtownards Road in Belfast. You'll pick up a plastic corker for a couple of quid. Saves you risking losing a bottle of plonk. Failing that, just go for the screw tops. They're easier and do the same job.

    My last one of these kits was sitting at about .990 after 8 days due to the kitchen being warmer than the 20° it normally sits at. Keep following the instructions to the letter and it will turn out fine. Just fermented out a bit quicker than normal. 24° is close to the max temp they recommend.
