    I bottled a Chardonnay 2 weeks ago today and put 5ltre in a demijohn and stuck it away. Had a peak today and the cork was off it and lying on the shelve.     Probably around 22 mate when adding the yeast. I’m finding better results with lower end of the 20s and letting it ferment a bit longer.     Bottle it and leave for a month I would say. Might be okay before then, but definitely leave it in bottle for a few weeks at the min.

    To be fair I haven’t done the 7 day kits. But all the other kits get better when left for at least 4 weeks.

    Sounds like shall be okay, most of the kits I do seem acidic when first made. Leave it to age 4 weeks or so and then check.
