Porter - Brambling Cross hop schedule guidance?

I'm another one who would drop the crystal and munich down, and agree around 10% between them, I love BX as a bittering hop in stouts and porters, I also add hops at 10 mins even though its not per style ( but it's what I like and that is the joy of brewing your own :thumb: ). EKG makes a...

Too much headroom, what to do?

I use a 70l FV ( I suspect its more to the very top, just a claimed 70l) for 50 - 55l batches and never had an issue. I tend to ferment with WLP023 so you NEED that sort of headroom or it all gets messy. However if you have to leave it for that long could you put into secondary as it slows...

    Using Spirits in Beer

The one I know of with rum and spices all goes into the cask. I believe its a single bottle for the cask, so not a huge amount really.

    Using Spirits in Beer

My local micro adds dark rum and spices to one of his beers for a festival special... :thumb:

    My First AG

+1 to Robs suggestion, plus write down everything you plan to do before as well. Its all too easy to miss a hop schedule, forget finings etc the first time out ( still is now to be fair ), but with it written down and planned you will more than likely get it right :thumb: Oh, and have fun...

    70l or 100l Shiny pots?

If I do another HUGE IPA or an RIS ( which I am still yet to brew ) then I will do a smaller batch ( around 25l ). I lose some efficiency on my cooler just due to how much I can submerge but that's about the only downside I can think of. Both elements are covered once I have 30ish litres in...

    70l or 100l Shiny pots?

I try and brew about every 5 or 6 weeks I suppose, sometimes on my own and some with a mate of mine and we split the brew. I could brew a smaller batch in the setup but to be honest I never have, new recipes are done to full scale as I know I'll drink it ;)

    70l or 100l Shiny pots?

Bigger, bigger, bigger - you know you want to :thumb: Seriously though, as people have said, you don't need to fill it right up and you are future proof I brew 50ish litre batches in 70l pots, doing again I would have a 100ltr boiler as I could then fill another keg in pretty much the same...

Einstok White Ale - help needed

Thanks Rob, I think although Hoegarden maybe close, it is quite different ( in that he claims not to like it anywhere near as much ). It could just be eased off on the coriander maybe, was hoping someone had tried it and had some idea of the hops.. Yeast wise, I am happy to use liquid, I...

    How do you strike?

Are you preheating your MT before you start? I chuck a kettle of boiling water in mine 20 mins or so before I am ready to dough in. As the kit is all kept in the garage I find this helps hugely :thumb:

Einstok White Ale - help needed

Hi this is one of my mates favourite beers at the moment and as he is 45 in May I was going to have a crack at something similar. I have never done a wit before, so starting with little knowledge it's hard to work out what is in there and what I need to order.. So any help would be great...

Recipe using up old ingredients - advice please

Personally I'd drop crystal to about 200g and throw the TW in the bin ;) Probably split the last hops between 10 mins and a steep as we'll, but it's all personal choice :thumb:

how long does a starter take?

Yes, but you'll likely need to pitch the lot and not decant off.

    Krausen not falling

That does sound mighty fast, although the larger volumes will speed up the ferment

    Steam Cleaning

This has been discussed a few times, the short answer is no, it's not really enough.

    Krausen not falling

Even when it looks clear there is enough yeast in suspension to prime :thumb:
