I have mainly given up on brewing having started a couple of years ago - getting well into it but it becoming trickier as time has gone on.
Therefore I am going to cut my losses and move on what I have.

This was another which is good, I have a barrel of each maturing made in the way described previously and are both nice drinks. But the admirals only makes 18l to start with but is very good.
Carbonation is very much a personal preference, I would tend to batch prime with 80/100g for bottles as I don't get too hung up on it.
I don't user straight sugar, I tend to use dry malt extract (light) or brew enhancer in the same quantity... just because If I am being picky about yeast/water...
No, i did not use campden or sodium met, i believe it was just spring water.
The taste did dissipate and it became really nice after a long maturation.
The start gravity was on the nose and the finish one was also and temps were good throughout.
If you are making a wherry, brew short to 20l, use spring water and upgrade the yeast to safale s04. All in all about £5 extra in costs but makes an ok beer into a nice beer.

I just use mineral water... it does make a fair difference and you can get 2 litres for 25p in Tesco so 10 of these cost £2.50 Better yeast costs £2.50.
£13.99 (dunelm special) wherry/admirals reserve kit + £2.50 + £2.50 = £18.99 for 20ltrs of decent quality beer with no hastle.
I am not too concerned about abv, flavour is everything to me. I am just digging into a festival pride of london porter and it is ok... not amazing. And coming in at about 5% and has been in the keg since mid december. Looking for an upgrade in the coopers stout.
Having read the coopers stout review there are a number of recipes to make a good stout.
Now I do appreciate that the answer is completely subjective but... what is the best recipe? What are your experiences?
I have started using decent yeast with 2 can kits and can confirm it's worth it! You get clearer beer coming out and a faster ferment. Also a wherry does not seem to stick. Only downside is I have a lot of spare yeast sachets!
yes, stressed yeast is another viable option - i only have not considered it this as I have done the same before but using spring water in the same temperatures with the same type of yeast and not had the same issue.
