    Thanks for that. That is what I was thinking too. I only ever do 1 gallon batches so will do a 50/50 mix. Probably 2lb of each. Your right about the acid. No extra in my Blackberry or the Blackcurrant but 1/2 tsps of mixed acid in the Blackberry/Elderberry. As you say they all make great wines...

    Brains... had it many years ago and was very nice but it's the thought of it now... and the texture. 🤢🤢 But would be willing to try Tripe again, SHMBO made it for me many years ago but refused to cook it again because of the smell.

    Im with CWRW, try a TC. I make it all the time and not had a bad bat h yet 5 ltrs 100% Apple juice 100 grams sugar 1/2 tsp yeast nutrient 1 tsp citric acid 11 /2 (1.5) tsps pectolase 1 mug strong black tea 1/2 pkt gervin GV13 cider yeast 1 DJ etc SG 1.052 FG 1.001 6.68% Started my latest...

    Adding more sugar

    If this is a kit wine why did you leave it 3 to 4 days before pitching yeast, all the kits i have ever done you put everything in right at the start, country wines are the only ones you steep the friut, flower or veg. Sounds like you might have an infection.

    It's been a week... Advice

    Warmer place would be a good idea, basically your fermenting in the bottle. I would have put 2 drops per 500ml bottle, but 1.5 probably will be ok. As for taste they will mature in the bottle so try one every now and then and if they don't improve you can always sweeten a bit in the glass...
