    Plum wine

    I've got damson wine on the go and was happy with adding 500g chopped raisins. I left it in the fermenter for 10 days when I went on holiday and now it's in a DJ it has the greatest deep red I've seen yet in a country wine (the colour of raspberries). My recipe came from the 'Booze for Free' book.

    Funnily enough I've just done one of these this morning. I've used 500g DME and 500g BKE and made an Amarillo hop tea in the emptied tin, with a Burton Union yeast. Let's see how it goes...

    woodford wherry. Advice on sugar

    I batch prime and used 100g with my last Wherry but found it a bit fizzy so I'm just about to bottle another Wherry this morning and will use 80g. (I boil the sugar in 300ml of water and let it cool).

    It stopped fermenting a couple of weeks ago from pressing end of September and mid October. I was hoping it was going to be drinkable by Christmas, but it sounds as if I'd best leave it until The Spring Thing in May. Thanks guys.

    And I have to say... 'eeurrgh' It's very, err, sharp. I think that the taste is there but I definitely felt the string tugging on my eyeballs... I'm not sure that the small amount of Splenda I added is going to cut it as it's not the dryness but the acidity that the problem. I don't think...

    Carbonation will take longer in that temperature range, but you haven't mentioned priming the beer (either in the bottles or batch). Did you add priming sugar before you bottled your beer?

    Those were my exact figures too. The FG didn't budge so I just bottled it. The taste is fantastic (500g DME, 450g brewing sugar, 50g Demerara sugar) so I'm just sitting on my hands while it carbonates & conditions.
