    Only 2 weeks and a day in the bottle perhaps (bottled on 19th?), but sounding really good! Congratulations on a good brew. My two s-04 brews continued to 'dry out' a little in the bottle after this point, but I guess there are a lot of factors.

    A month doesn't sound crazy to me, but I wonder if that takes account of raking up the temps well into the twenties and occasionally rousing. If you are worried, how much alcohol is in there already? The stronger the better, obviously. I left two strong trippels with 13L headspace for 3 weeks...

    18g sugar per litre will raise the ABV by roughly 1%. 1Kg will raise 21L by roughly 2.6% ABV. (1000/21)/18=2.64
