    Some of the previous answers seem to have overlooked something in your original question. Whatever you do, don't POUR your brew into the keg. Make sure that you carefully pump or syphon it, making sure not to suck up any of the gunge from the bottom of the fermenting vessel.

    I have similar tastes and have just had the last bottle of some Admirals Reserve I made 6 months ago. Much better with age & it's certainly malty and flavoursome but not too bitter. St Peter's Ruby Red would also fit the bill, but the best kit I've ever made is a Brupak FIxby Gold.
