    Update: I experimented with one J20 bottle and some of the left-overs from cider bottling, plus 25ml apple juice to prime. The bottle did not explode, so a few weeks ago I primed the rest and filled them with rosepetal cider. They go into the fridge on Tuesday.

    The amount of alcohol in the mixture should mean that oxidation isn't too much of an issue, however you could divide a campden tablet between the jars just in case.

    There might be a barely perceptible change in flavour, but nothing significant enough to worry about. TBH the "5 gallon" thing is only a guideline, not a guarantee. Some ciders & wines need a lot more finings, while others need none.

    I put my left-over ginned sloes into some sloe port. This is the combination I used: 75cl red wine 23cl (1/3 bottle) brandy 110g (1/3 jar) honey OR 75g granulated or demerara sugar About 500g sloes, any combination of ginned and frozen. This should all fit into a 1.5L Kilner jar.

    The best wax to use is beeswax. Paraffin wax is too brittle and soywax too soft. The wax is infinitely reusable.

    Berry Cider

    Add immediately before bottling, and add to taste, the same as with sweetener. Since they're either extracts or artificial flavourings, you may also want to add some food dye. A mixture of mostly dark red/cochineal and a little blue should give you the colour you want.

    I'd be stunned if you'd had even a hint of frost in London yet. Bedford averages 3-4C colder, and we've had only one very light frost this winter. I'm not sure if freezing will have the same effect as a hard frost, but it will break down some of the cell walls, which is desirable.
