My current favourite "Quick Hit" kit (5 day). I let it finish, stabilise, thrash it with a drill for an hour, and add the first finings. Then instead of adding the second finings 3 hours later, I leave it at least another day. I then leave it at least 5 more days before bottling (so 10-11 days...

Beautiful idea. My old Grandad was in the RN, serving on the Royal Sovereign (BIG war canoe), the Cairo and the Sturgeon. His 5 brothers were in the army - 2 never came back. Definitely doing this :thumb:

Looks incredible! If it was the last thing I could ever eat, that would pretty much fit the bill.

I give 5 day kits a full 7 days and they're usually pretty good. I used to tip from one 5Gal bucket to another about 20 times, which is a real ball ache - with the big spoon and the drill, I just beat the living wotnot out of it until there're bugger all bubbles left. Usually takes 20 minutes.

One of those cheapo 2 ring & grill gas cookers. Impresses the sh*t out of newbie campers when you do a seafood risotto (all stuff pre-prepared and kept cool) or something of that ilk. Another must for me is a dog - trained to sniff out and retrieve sausages 'n bacon from the tents of other...

Put the bog roll in the freezer. Not a complete cure, but it does help ;-)

I've eaten "hot sh*t" for the last 30 odd years (every day with garlic too). Hottest I ever had were the Dorset Naga's in their raw form. Last year I had 49 varieties growing. This year I have @ 19 .... mostly Thai Birdseye, Habs, and Naga's. Dried stuff is great as a "condiment", but for...

Try 'em in Harissa paste. I make a simple one using garlic, olive oil, toms, and Naga's. Each time you take a tablespoon out to "ramp up" a curry, just drizzle a little oil on what's left in the jar. It'll last yonks, and is great to cook with. TBH, most of the dried ones I've bought on EBay...
