I'm trying to copy an El Dorado Single Hop ale I had in a pub pre Xmas. Just pondering what yeast to use? Do I go with Nottingham or S-04,or am I better going with an American yeast? Only asking as I messed up using Winsdor on my last batch and have no clue on American yeasts. Here's recipe

    Stuck brew? Part2

I did an AG Speckled Hen last week and I've been checking the HDrometer levels. Its been at 1026 for about 5 days now from OG of 1066. I've given it a gentle stir and I'll see how this goes. I'm thinking of re-pitching if this doesn't work as the yeast I used was Danstar Winsdor after looking...

My Biab set up so far

The temp held perfectly for about 40 min but then I took it off as I thought you had to give the brew a stir(It was my first Biab) and it lost 1/2 a degree. Next time I'm going to leave it on for the whole 90min

    Pitching yeast

It'll be ok ,it'll still ferment. When I started I was chucking the yeast in at 30c+ :o before I came to this forum. 26 c isn't that bad. Can you cool it anymore? Put the bucket in some ice water?
