    Over did it with bittering hops

    I brewed a bitter recently which was based on GH summer ale, but I left it after the boil for another 10 minutes or so, so the hop timings got effectively extended by 10 minutes. Anyway after 4 weeks in the bottle it way too bitter, but another 4 weeks and it's mellowed nicely

    Top Cropping Question

    Yeah as Nottsbeer says, you cropped too late. I haven't used WLP013 so I can't say for certain, but the best time to crop is when the gravity has fallen by about 50% (give or take 10%). I.e.if you're fermenting 1.040 wort and expecting it to reach 1.010, you want to crop at about 1.025.

    I have a GF not a BZ but they're similar enough on this regard. I tried pellets with a hop spider and got loads of debris going through the filter.     I have this exact phenomenon in a Mangrove Jacks Irish Stout kit. Some bottles gush, some don't. My research (30 bottles in) suggests the gushers have hop debris.
