    wine too fruity

Last year I made some red fruit wines, elderberry, bramble and cherry. They are surprisingly good except everyone tells me they are too fruity. Is it just that they are comparing them to shop bought wine which can be devoid of fruity flavours?

    cider too acidic

I made a cider last year which had a really good flavour. Unfortunately it was way too acidic, it was drinkable, just about. It is coming up to cider time again and I need to make it more palatable. Does anyone have any ideas. I used a mixture of crab apples and desert apples.

How can I tell if its clear

Hi all. I made four gallons of Elderberry wine in October from frozen berries. The DJ's have been sat on the garage floor for two months now to clear. The problem I have is the wine is so dark I can't tell if it is clear enough to bottle yet. I usually find my red wines are clear after a couple...

    I could kick myself

On and off for the past 30 years I have only brewed wine. Because 30 years ago I tried brewing a beer kit and it was really awful. I convinced myself that I could not brew beer. Three months ago the Missus said my wine is OK, but it is too strong sometimes, and could I brew a beer. Well the...

    CAN'T GET THE CIDER GOING

Ten days ago I pressed some crab apples and some sweet apples and got three gallons of juice. I added three crushed campden tablets and three days later, seven days ago, I added some general purpose yeast. Nothing happened so three days later I added some fizzing active yeast and nutrient, and...

    FRUIT LEAF WINES

Hi all, I have just picked my black currants and popped them in the freezer, but there is hardly any this year. I will have to keep them in the freezer. As I was picking them I noticed the smell of blackcurrant from touching the leaves and I have just gone out and pulled off a small piece of...

    ORGANIC WHEATGRASS

Hi, I have a Kilo of Organic Wheat grass Seed and I don't know what to do with it. I guess I could make a wheat wine from it but I cannot find any recipes. Has anyone used wheat grass to make wine? If so was it worth it?

    But the cider is awful

I have been making lots of wine this summer and autumn and most of it is really nice. But my cider is really awful. By that I mean it is like drinking watered down apple juice. It has no body to it at all. When I made that juice it was really appley and sweet. But it has lost all of its...

How do you tell when wine is clear?

I have done batches of Plum, Blackcurrant, Bramble Carrot and Green Bean wine this year. I have bottled all except the plum, so far. I let them all stand to clear for between two and three weeks. When I took samples from them, before bottling, they appeared so clear they brought a smile to my...

    I got my MOJO back

Hello to everyone. I have not posted here for well over a year because I was ashamed of the atrocious alcoholic messes I have been making. I came back to home wine making a couple of years ago after nearly twenty years. I still visit the site occasionally but not to post. Full of confidence I...

    Having another round

Hi all, I made wine for many years until the kids were born. I used to find odd things floating in the wine, Gonks and the like. So I gave up for a few years. I met up with an old school friend over Christmas who also recently got back into wine making. He inspired me to give it another go...
