    BBP Wunderlager

Ah OK, so ramping straight up from 8 to 18 probably won't be good for it? Sorry, this is my first lager, and my first D-rest for that matter. If I go up one degree a day now I'm not sure how that will work out. I also wondered as the packet yeast says upper fermentation temp is 15 degrees...

    BBP Wunderlager

Cheers, Some very good points! My OG was 1.044 mind you but my grain bill was a bit more than the recipe. The gravity is dropping a point a day at the moment, dropped temp to 8 degrees today so will plan to d-rest in a couple of days if it keeps going as you're right, I've never noticed that in...

    BBP Wunderlager

So I've been away for while, possibly years and I've come back with a grainfather, an inkbird controlled fridge setup and am brewing a light, hoppy, summer lager based loosely on Brussels Beet Project's Wunderlager. I've taken their recipe and adjusted with some bits of advice I've seen...

    WTF is going on?

I'm sure I read on a pro brewer's forum that US-05 was causing off-flavours but more ethanol/high alcohol taste.

    Alcohol Taste in IPA

Recipe with OG higher than expected.

    Alcohol Taste in IPA

I made a copy of gamma ray in the grainfather and bottled it last week. I was brewing again yesterday and was curious to see how the conditioning was going (6 days in). It had a decent little fizz and good head retention but all I could taste was alcohol. I've looked at common reasons and...

    FG 1.022 Hefweizen?

Thanks Maxonian, that was my inclination. Still tastes good so fingers crossed even better when carbed, cold and conditioned.

    FG 1.022 Hefweizen?

Well I've left it another week after agitating and bumping the temp up to 22/23 degrees. The airlock started again for a few days but checked with hydrometer and still 1.022. Stuck fermentation? Do I dump it into another fv and get some more yeast in or risk crash cool and bottle? The recipe...

    FG 1.022 Hefweizen?

Thanks DWhite I'm using a hydrometer but yes will leave another week. Temp between 19 and 21 degrees and not the 25 I wanted.

    FG 1.022 Hefweizen?

I brewed my first GF beer in a while, copy of Brussels Beer Project's Big Bertha. Their own recipe has OG of 1.068 finishes at 1.020. Mine started 1.064 and is 1.022 2 weeks in. The temp is slightly lower than I wanted due to a rubbish fridge but wonder if it is finished fermenting? The recipe...

Grain Bill too low for OG?

Haha that's what I thought. Similar profile to Hallertau Mittelfruh so that's what I got!

Grain Bill too low for OG?

They are very good, a bit different and lots of new ones all the time. The lager is really good for a light, cold, hoppy summer drink.

Grain Bill too low for OG?

Maybe not... haven't much spare grain without spoiling my second and third brews. Have a few hundred grams of pale wheat and crystal malt hut nothing else spare. Will go wit the Big Bertha this weekend. Thanks for the help and for making my mind up! Maybe not... haven't much spare grain without...

Grain Bill too low for OG?

Thanks I assumed that would be the best way to boost the abv, the only problem now is I don't have sufficient pale ale malt so I'll root around and see what other grain I have (I wonder if a lager malt will work). Or maybe I'll brew the Big Bertha first as that recipe does achieve abv in GF...

Grain Bill too low for OG?

I guess, but they will say a Belgian IPA so maybe they want some phenolic character... I can't really remember how it tastes.

Grain Bill too low for OG?

2 packets of belle saison rehydrated hopefully.

Grain Bill too low for OG?

I watched the tutorial and they didn't mention that I don't think. I did ask them afterwards but no response. They are generally a good bunch, I crowdfunded them when I lived in Belgium last and am a beer@home customer so get 12 bottles every 2 months in the post. Some good stuff.

Grain Bill too low for OG?

And thanks for that link, saves me looking in 3 places for those recipes!

Grain Bill too low for OG?

Yes, they did a really good live chat where 3 of their brewers talked through the while process and answered questions.

Grain Bill too low for OG?

Long time away from here but I finally have a grainfather set up in a place I can use it and planning a brew this weekend. One of my favourite modern Belgian breweries has shared some recipes on FB and I've bought ingredients to make all 3. I've attached the one for a Belgian IPA, but when I...
