    The only way to know if your water will work well is to get a water report. Your water may do ok as is but it likely won't be at its best. If I had no clue as to what my water was like I'd use all RO water and build it up to what I wanted with salts. BrewersFriend has a nice water calculator...

    Mid-boil hop additions

    There are some who feel this chart is bogus, and I believe that all the hops vary to a degree on when they're at their peak for flavor and aroma. Regardless I have changed my hop schedule due to this chart and drop my flavoring hops at 21 mins and aroma hops at 7 mins.

    I'm still at a loss for why both of my test beers alone are subpar but both boiling and extracting makes such a superb pepper beer. If there's a next time I'd suggest trying that (half in the boil and half in an extract).

    I actually ate a whole habanero while on vacation. Started with a half. No big deal again. Went for the other half and began chewing as I found my stomach beginning to burn a little. But after eating it all my stomach was very upset for about 10-15 mins.
