I haven't bottled my blackberry and elderberry wine yet, as I degassed it last week with a view to bottling today. Nope still very gassy so presuming it's still doing its thing slowly in the cold cellar.
 
Hi all, Just bottled 5ltrs of last year's cider that had been stored over winter, crystal clear, tasted mighty fine. Bottle primed with 5g sugar in 500ml bottles,looking forward to enjoying a glass of this in the garden with a couple of friends in a few weeks time.
 
I racked off the Pomona (apple wine) into fresh DJs this evening and had a taster. Mmmm. Lovely, still a little bit rough around the edges but tastes very much like a sweet sherry. One DJ was a little bit rougher than the other, am I better keeping the two separate when bottling, or mixing them 50/50?

OG was 1.190 and now at 1.045 so I make that to be 19% and not even fortified - yowsa! :^)
